to name a few.  There is an international theme this year.  Each food vendor will serve food with this theme (Jeanne Jones Co. will be doing German Fare).  The theme will also carry over into the music & entertainment for the day!  Join us for what looks like (in terms of the weather) a beautiful fall day, for an amazing outdoor family event!

Baked Pasta with Garden Veggies & Sausage

Baked Ziti...how many times in your life have you had baked ziti @ a party with just ziti, sauce & cheese?  Nothing wrong with the combo, but adding different ingredients like, shrimp, scallops, grilled chicken, sausage, turkey meatballs or even pancetta! Try grilled veggies, spinach, mushrooms or roasted peppers & add ricotta.  Using pastas like, orriechette, rigatoni or bowties instead of ziti will make for a more gourmet looking ziti for your next party...or dinner!

~Confetti Rice is a side dish that I developed for a family that would order very healthy meals each week.  I was just starting my Personal Chef business & I was trying to come up with fresh, flavorful & exciting low-fat meals & side dishes.  This dish is full of flavor with fresh dill & green onions. The great thing about this dish is using seasonal veggies.  Confetti rice doesn't always have the same vegetables, but the veggies vary in color & are diced small.  Using chicken stock instead of water adds to the flavor of the dish!  This can also be made with brown rice, couscous, or quinoa (for a gluten free side dish).

   Cookie Ice Cream Sandwiches with Cookies from Once Upon A Cookie......

     I have been working on some dessert ideas that are unique, fresh & fun...for the kids & the adults!  Personally,  I am not a huge dessert fan,  but there are a few desserts that have crossed my path that I hold dear to my heart.  This is one of them!   I used to eat these on the Ocean City Boardwalk (they were the kind that were packaged & sold from a bicycle ice cream cart!) 
      I have fallen upon the most delicious cookies from 'Once Upon a Cookie'.  The cookies are heavenly and incredibly sturdy to use for these ice cream sanwiches.  In the photos, the cookie on the left is made with the chocolate chip cookie & the cookie on the right is made with the oatmeal raisin cookie (my personal favorite!)  I will be trying experimenting with different cookie & ice cream flavors ~ stay tuned!

Citrus Herbed Crab Cake

  Jumbo lump crab meat is not the
     only star in this crab cake!  Fresh dill, green
     onions & plenty of lemon zest, give this crab
     cake a refreshing flavor, like no other!  Serve
     with confetti rice or quinoa & homemade lime
     mustard sauce...delicious!

Piccata ~ Chicken, Turkey, Veal, Flounder or Talapia

~Chicken Piccata~

This is NOT your average Piccata!
Chicken Piccata is usually dredged in seasoned flour,  & then
cooked in a little oil. The flour allows the meat to absorb the piccata sauce when you pour the sauce over the chicken. 
To grill the meat, makes this meal a bit of a lighter version   
   of Picatta.  It is a rich sauce in flavor, but light in texture with
   capers & fresh lemon zest.

Lemon Confetti Quinoa & Shrimp

Quinoa is one of my favorite foods to cook.  It is consindered a  
     superfood & it is a whole grain that is a complete protein  Quinoa  is
 gluten-free & makes a great addition to soups, side dishes or even
     an exciting main dish, like this Lemon Confetti Quinoa & Shrimp
     dish.  Confetti is my version of a medley of seasonal & colorful
     veggies that are diced fine & added to this quinoa dish, rice or
     even small pasta salads.  Quinoa is a newcomer to most, & if you
     are not familiar with it, it may come be a little intimidating to work 
     with.  Never fear ~ it is as simple to cook as it is to cook rice.
     The only trick is to measure out the amount of quinoa that
 you are going to use & rinse it under cold running water
 before you cook it.    I will add chicken, seafood or  beef
stock  instead of  water, to add flavor to the quinoa.
 Then just add your protein and/or veggies.
